Hand-harvested at peak ripeness, the cherries undergo a carefully controlled 48-hour oxidation, followed by 72 hours of submerged fermentation, and a slow 17-day drying on raised beds.
Tasting Notes: black pepper and sweet cucumber lift a core of red fruit, plum, and red grape, all rounded by almond, brown sugar, and molasses depth.
